  • 180 gWheat bran
  • 180 gMilk
  • 360 gFlour
  • 6 gBaking powder
  • 3.9 gCinnamon
  • 4.5 gSalt
  • 1.25 gBaking soda
  • 0.26 gCloves
  • 180 gBrown sugar
  • 80 mlVegetable oil
  • 1 pcsEgg
  • 360 gApple
  • 120 gCranberry

    Prepare

    • Combine wheat bran and milk in a mixing bowl and let rest for 5 minutes.

    Mix dry ingredients

    • Whisk together flour, baking powder, cinnamon, salt, baking soda and cloves in another bowl.

    Finish batter

    • Stir brown sugar, vegetable oil and egg into the bran mixture.
    • Stir in the dry ingredients, then fold in the chopped peeled apples and dried cranberries until just combined.

    Bake

    • Spoon batter into greased muffin cups or paper liners, filling each about 3/4 full.
    • Bake at 200 °C for 15–20 minutes or until a tester comes out clean.
    • Let cool briefly in the pan, then transfer to a rack to cool completely.
