Ingredients

  • 600 gChicken breast
  • 45 mlOlive oil
  • 1 pcsOnion
  • 800 gTomato
  • 9 gGarlic
  • 2 pcsCinnamon stick
  • 15 gHoney
  • 15 mlVinegar
  • 5 gSalt
  • 1.5 gPepper
  • 400 gTortellini
  • 40 gParmesan

Instructions

    Preparation

    • Weigh and prepare the ingredients.
    • Halve or cut the chicken breasts into thick strips if needed, season with salt and pepper.

    Make the sauce

    • Heat the olive oil in a medium saucepan.
    • Lightly brown the chicken in the hot oil but do not cook it through; remove and set aside.
    • Fry the onion in the remaining oil for 2–3 minutes until translucent.
    • Add garlic and (if using) chopped peach and fry briefly (about 1 minute).
    • Cut the canned tomatoes and add them to the pot.
    • Add cinnamon sticks, honey, vinegar and the browned chicken, stir to combine.
    • Cover and simmer on low–medium heat for 45 minutes, stirring occasionally.
    • Remove the lid and simmer for another ~15 minutes until the sauce thickens and the chicken is cooked.

    Cook pasta

    • Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.
    • Drain the pasta and let it sit briefly.

    Serve

    • Remove cinnamon sticks and cut the chicken into pieces if desired.
    • Place pasta on plates, spoon sauce and chicken over it.
    • Sprinkle with freshly grated Parmesan and serve immediately. Garlic bread is optional.
