Ingredients

  • 550 gSausage
  • 250 gBacon
  • 600 mlChicken broth
  • 900 gPotato
  • 220 gOnion
  • 1 gSalt
  • 1 gPepper

Instructions

    Prepare and brief boil

    • Place bacon (cut into ~3 cm pieces), onions (halved or thickly sliced) and sausages into a sufficiently large pot.
    • Add 300 ml chicken stock to cover the meat and onions. Bring to a boil, then simmer gently for about 5 minutes.

    Add potatoes and remaining stock

    • Peel (optional) and cut potatoes into bite-sized pieces.
    • Add the potatoes to the pot and pour in the remaining 300 ml of chicken stock.

    Simmer

    • Bring back to a boil, then reduce heat and simmer covered for about 1 hour until potatoes begin to disintegrate and thicken the broth.
    • Check occasionally and add a little water or stock if necessary to prevent sticking.

    Season and serve

    • Season with salt and freshly ground pepper to taste.
    • Serve hot. Optionally garnish with chopped parsley.
