- Melt the butter in a large skillet over medium heat (cast iron preferred).
- Add the chopped onion and cook a few minutes until translucent.

Add potatoes and corned beef
- Add the potatoes and corned beef and mix together.
- Spread the mixture evenly in the pan and increase heat to high or medium-high.
- Press the mixture down with a metal spatula to form a crust.

Brown and flip
- Do not stir constantly; let the bottom brown until crisp.
- Use a spatula to check the underside and flip sections to brown the other side.
- If sticking, add a little more butter as needed and continue until nicely browned all over.

- Remove from heat, stir in chopped parsley.
- Season generously with freshly ground black pepper and add salt to taste.
