  • 150 gOnion
  • 720 gCorned beef
  • 450 gPotato
  • 0.3 gSalt
  • 0.3 gPepper
  • 15 gParsley

Instructions

    Sauté the onions

    • Melt the butter in a large skillet over medium heat (cast iron preferred).
    • Add the chopped onion and cook a few minutes until translucent.

    Add potatoes and corned beef

    • Add the potatoes and corned beef and mix together.
    • Spread the mixture evenly in the pan and increase heat to high or medium-high.
    • Press the mixture down with a metal spatula to form a crust.

    Brown and flip

    • Do not stir constantly; let the bottom brown until crisp.
    • Use a spatula to check the underside and flip sections to brown the other side.
    • If sticking, add a little more butter as needed and continue until nicely browned all over.

    Season and serve

    • Remove from heat, stir in chopped parsley.
    • Season generously with freshly ground black pepper and add salt to taste.
    • Serve immediately while hot.
