Shape and season patties
- Divide 450 g ground beef into 4 equal portions and form 4 patties about 110–115 g each (≈2 cm thick). Press a slight depression into the center of each patty.
- Season both sides of the patties with salt (about 2 g total) and freshly ground black pepper (about 1 g).

Breading
- Beat 3 eggs in a shallow bowl.
- Dip each patty in the beaten egg, then dredge in panko breadcrumbs until evenly coated. Place on a plate and rest briefly.

Fry
- Preheat a griddle or large pan over medium-high heat for 2–3 minutes.
- Add enough olive oil (about 30 ml) to generously coat the pan.
- Cook patties in the hot pan: 3 min per side for medium-rare, 4 min per side for medium, 5 min per side for well done.
- Drain briefly on paper towel if needed.

Assemble and serve
- Split and toast the 4 hamburger buns.
- Spread the cut sides with mayonnaise (about 60 g total). Place a patty on the bottom half of each bun, top with the other half and serve warm.
