  • 450 gBeef
  • 30 mlOlive oil
  • 2 gSalt
  • 1 gPepper
  • 3 pcsEgg
  • 80 gBreadcrumbs
  • 4 pcsRoll
  • 60 gMayonnaise

    Shape and season patties

    • Divide 450 g ground beef into 4 equal portions and form 4 patties about 110–115 g each (≈2 cm thick). Press a slight depression into the center of each patty.
    • Season both sides of the patties with salt (about 2 g total) and freshly ground black pepper (about 1 g).

    Breading

    • Beat 3 eggs in a shallow bowl.
    • Dip each patty in the beaten egg, then dredge in panko breadcrumbs until evenly coated. Place on a plate and rest briefly.

    Fry

    • Preheat a griddle or large pan over medium-high heat for 2–3 minutes.
    • Add enough olive oil (about 30 ml) to generously coat the pan.
    • Cook patties in the hot pan: 3 min per side for medium-rare, 4 min per side for medium, 5 min per side for well done.
    • Drain briefly on paper towel if needed.

    Assemble and serve

    • Split and toast the 4 hamburger buns.
    • Spread the cut sides with mayonnaise (about 60 g total). Place a patty on the bottom half of each bun, top with the other half and serve warm.
