Preparation
- Preheat the oven to 190°C.
- Combine the flour, salt and freshly ground black pepper in a shallow dish.
- Place the panko breadcrumbs in a second shallow dish.
- Put the freshly squeezed lemon juice in a large bowl.

Breading
- Use the 'wet-hand, dry-hand' technique: one hand for flour, the other for the lemon juice to avoid clumping.
- Dredge each salmon fillet in the flour mixture, dip briefly into the lemon juice, then press into the panko so it is well coated.
- Brush or spray the coated fillets lightly with olive oil and place on a lined sheet pan.

Bake and Broil
- Bake in the center of the preheated 190°C oven for about 27 minutes, until slightly underdone.
- Remove from the oven and turn the broiler on.
- Place the salmon under the broiler until deeply browned and the crust is crisp (watch closely, a few minutes).
- Serve immediately with extra lemon juice.
