  • 680 gSalmon fillet
  • 60 gPanko
  • 2 tbspOlive oil
  • 120 gFlour
  • 18 gSalt
  • 7 gPepper
  • 60 mlLemon juice

    Preparation

    • Preheat the oven to 190°C.
    • Combine the flour, salt and freshly ground black pepper in a shallow dish.
    • Place the panko breadcrumbs in a second shallow dish.
    • Put the freshly squeezed lemon juice in a large bowl.

    Breading

    • Use the 'wet-hand, dry-hand' technique: one hand for flour, the other for the lemon juice to avoid clumping.
    • Dredge each salmon fillet in the flour mixture, dip briefly into the lemon juice, then press into the panko so it is well coated.
    • Brush or spray the coated fillets lightly with olive oil and place on a lined sheet pan.

    Bake and Broil

    • Bake in the center of the preheated 190°C oven for about 27 minutes, until slightly underdone.
    • Remove from the oven and turn the broiler on.
    • Place the salmon under the broiler until deeply browned and the crust is crisp (watch closely, a few minutes).
    • Serve immediately with extra lemon juice.
