- Lay a sheet of phyllo, spread some filling, and continue alternating layers until both phyllo and filling are used.
- Finish with a sheet of phyllo and cut into serving pieces.

- Beat the last egg with the soda water and stir well.
- Pour the egg mixture over the banitsa, ensuring no dry spots remain.
- Bake in a preheated oven at 200 °C for 40 minutes or until golden.
