Ingredients

Instructions

    Preparation

    • Brush the grill plate or large pan sparingly with olive oil and preheat over low heat.
    • If possible, create heat zones (cooler and hotter areas). Clean mushrooms with a brush, trim stems to the cap level. Halve tomatoes and remove the green core. Make small cuts in the bacon fat edge. Cut the black pudding into 3–4 slices and remove the skin. Have the bread ready (preferably a day or two old).

    Cook sausages

    • Place sausages on the cooler part of the grill or pan and cook slowly 15–20 minutes, turning occasionally until evenly browned.
    • If space is tight, cook sausages completely and keep warm in the oven (approx. 80–90 °C).

    Fry bacon

    • Make a few small cuts in the fatty edge of the bacon. Fry on the hot grill or pan 2–4 minutes per side until crisp to your liking.
    • Keep cooked bacon warm in the oven if needed.

    Mushrooms & tomatoes

    • Season mushrooms with salt and pepper, drizzle with a little olive oil and place stem-side up for 1–2 minutes, then turn and cook 3–4 minutes more.
    • Place tomato cut-side down for 2 minutes, turn gently, season again and cook 2–3 minutes until tender but holding shape.

    Black pudding

    • Cut black pudding into 3–4 slices, remove the casing and fry 1½–2 minutes per side until slightly crispy.

    Fried bread

    • Heat a frying pan over medium heat and cover the base with oil (about 1 tbsp). Fry the bread 2–3 minutes per side until golden and crisp. Add a knob of butter after turning for extra flavor.

    Fried eggs

    • Crack the eggs into the pan with the fried bread and let sit 30 seconds. Add a knob of butter and baste the eggs with the melted butter. Cook to preferred doneness, season and remove carefully.

    Serve

    • Arrange everything on warm plates and serve immediately with ketchup or brown sauce if desired.
