Ingredients

  • 120 mlMayonnaise
  • 2 pcsChipotle
  • 1.5 tspCayenne pepper
  • 0.5 tspSalt
  • 0.5 tspPepper
  • 1 tspSteak seasoning
  • 454 gGround beef
  • 1 tbspOlive oil
  • 100 gBacon
  • 80 gPepper jack cheese
  • 280 gRoll
  • 40 gSalad
  • 150 gTomato
  • 80 gOnion

Instructions

    Make chipotle mayonnaise

    • Stir mayonnaise and finely chopped chipotle chiles in adobo together in a bowl.
    • Cover and refrigerate the sauce until ready to use.

    Form and season patties

    • Mix cayenne, salt, black pepper and Montreal steak seasoning in a small bowl.
    • Divide the ground beef into 4 equal portions and form patties about ½ inch (1 cm) thick.
    • Press a slight indentation into the center of each patty.
    • Brush patties with olive oil and season both sides with the spice mix.

    Grill

    • Preheat the grill (or a grill pan) until very hot.
    • Grill the patties, turning frequently, until desired doneness (about 6–10 minutes depending on heat).
    • Remove patties and place a slice of pepper jack cheese on each so it melts slightly.
  4. 4

    Assemble

    • Toast the buns briefly on the grill or in a pan.
    • Place a patty on each bun, top with 2 slices of crispy bacon and a spoonful of chipotle mayonnaise.
    • Add lettuce, tomato and onion if desired and serve immediately.
