Make chipotle mayonnaise
- Stir mayonnaise and finely chopped chipotle chiles in adobo together in a bowl.
- Cover and refrigerate the sauce until ready to use.

Form and season patties
- Mix cayenne, salt, black pepper and Montreal steak seasoning in a small bowl.
- Divide the ground beef into 4 equal portions and form patties about ½ inch (1 cm) thick.
- Press a slight indentation into the center of each patty.
- Brush patties with olive oil and season both sides with the spice mix.

Grill
- Preheat the grill (or a grill pan) until very hot.
- Grill the patties, turning frequently, until desired doneness (about 6–10 minutes depending on heat).
- Remove patties and place a slice of pepper jack cheese on each so it melts slightly.

Assemble
- Toast the buns briefly on the grill or in a pan.
- Place a patty on each bun, top with 2 slices of crispy bacon and a spoonful of chipotle mayonnaise.
- Add lettuce, tomato and onion if desired and serve immediately.
