- 100 gCornmeal
- 30 mlLemon juice
- 18 gSalt

- 7 gCayenne pepper

Prepare
- Pat the fish fillets dry and halve into portions if desired.
- Mix all dry seasonings (salt, black pepper, cayenne, smoked paprika) in a bowl.
- Place cornmeal in a shallow dish. Have lemon juice ready.

Breading
- Dip fish briefly in lemon juice.
- Season fish with the spice mix so it is evenly coated.
- Dredge each piece in cornmeal to form an even thin coating.

Fry & Finish
- Heat frying oil to 190 °C (375 °F).
- Fry fish in batches for 3 minutes until golden. Drain on a rack.
- If the interior is underdone, finish in a preheated oven at 175 °C (350 °F) for a few minutes instead of longer frying.
- Cut into sticks and serve with lemon wedges.
