Preparation
- Peel the potatoes and cut into small or large wedges as desired.
- Cut the chicken into small pieces; halve larger bone pieces if necessary.
- Measure water (180 ml). Have salt and cumin ready.

Fry the potatoes
- Heat oil in a large pan or pot to about 175 °C (350 °F).
- Fry potato wedges in batches until light brown and crisp (about 6–12 minutes depending on size).
- Drain fried potatoes on paper towels and salt lightly while hot.

Brown and simmer the chicken
- Heat a little of the oil (or a splash of fresh oil) in a second pan and brown the chicken pieces for about 5 minutes until colored.
- Drain excess fat or transfer the chicken to a clean pan.
- Salt the chicken, add 180 ml water and simmer covered over medium heat for 15–20 minutes until tender.

Combine and finish
- Place the fried potatoes on top of the simmering chicken.
- Sprinkle the cumin over the dish and cover, simmering gently for another ~20 minutes so flavors meld.
- Taste and adjust salt before serving.
