- 750 gGround meat
- 128 gBacon
- 4 pcsEgg
- 24 gSalt
- 100 gZwieback
- 240 mlWater
- 60 gButter
- 2 gJuniper berry

Prepare the meat mixture
- Finely chop the minced meat and bacon (or use pre-mixed minced meat).
- In a large bowl combine the minced meat, finely diced fresh bacon, eggs, salt, toasted breadcrumbs, a little freshly grated nutmeg and black pepper.
- Add the cold water and mix thoroughly with wet hands or a spoon until the mixture binds together.

Shape and coat
- Form a round, compact patty with wet hands (approx. 1 patty).
- Moisten the outside briefly and coat lightly with additional breadcrumbs.

Fry and braise
- Heat the butter in an ovenproof skillet. Optionally add some crushed juniper berries to the butter.
- Place the fricadelle into the hot butter and fry until light golden on all sides (do not over-brown).
- Pour in about 2 cups (480 ml) of water, place the pan in a preheated oven at 180°C (top/bottom heat) and braise for about 60 minutes, repeatedly spooning the pan juices over the patty.
- If your oven does not provide sufficient bottom heat, first braise covered on the stovetop for 30 minutes, then finish uncovered in the oven to get color on top.
- The fricadelle should be dark yellow (not dark brown). Let rest 5 minutes before serving.
