  • 30 gButter
  • 30 gPork lard
  • 5 gSalt

    Preparation and frying

    • Peel the potatoes and leave them whole (halve larger ones).
    • Heat 30 g butter and 30 g pork lard in a large skillet (with lid) over medium heat until the fat is hot but not smoking.
    • Add the potatoes, sprinkle evenly with 5 g salt, and immediately cover the skillet tightly with the lid.
    • Reduce heat to low–medium and cook slowly for about 45–60 minutes. After 20–30 minutes check: when the bottom side is golden, turn the potatoes carefully, cover again and continue cooking until tender and golden all over.
    • Optionally season with freshly ground pepper before serving and serve warm.
