Prepare spice rub
- Combine all seasonings in a bowl and mix well.

Prepare and marinate hens
- Spatchcock the hens (remove the backbone and press flat).
- Brush the hens all over with melted bacon fat.
- Massage the spice rub into the hens.
- Refrigerate, covered, for at least 1 hour (or up to 8 hours).

Grill
- Preheat a charcoal grill using a chimney starter and set up for medium heat.
- Place the hens breast-side down on the grill.
- Turn frequently and grill until both thigh and breast reach an internal temperature of 74 °C.
- Brush with additional bacon fat if needed while grilling.

- Remove hens from grill and let rest for 10 minutes.
- Serve whole or halved.
