  • 18 gSalt
  • 6 gPepper
  • 9 gCayenne pepper
  • 10.5 gBell pepper
  • 12 gLemon pepper
  • 2 gRosemary
  • 8.5 gGarlic powder
  • 2 pcsChicken
  • 30 gBacon fat

Instructions

    Prepare spice rub

    • Combine all seasonings in a bowl and mix well.

    Prepare and marinate hens

    • Spatchcock the hens (remove the backbone and press flat).
    • Brush the hens all over with melted bacon fat.
    • Massage the spice rub into the hens.
    • Refrigerate, covered, for at least 1 hour (or up to 8 hours).

    Grill

    • Preheat a charcoal grill using a chimney starter and set up for medium heat.
    • Place the hens breast-side down on the grill.
    • Turn frequently and grill until both thigh and breast reach an internal temperature of 74 °C.
    • Brush with additional bacon fat if needed while grilling.

    Rest and serve

    • Remove hens from grill and let rest for 10 minutes.
    • Serve whole or halved.
