Prepare
- Preheat the oven to 180 °C (350 °F).
- In a small bowl combine the cheddar, finely chopped green onion, salt, pepper, sour cream and mustard.

Fill and roll
- Place one crepe on a work surface and lay one slice of ham on it.
- Spread about 1 tablespoon of the cheese mixture over the ham.
- Roll up the crepes and arrange them seam-side down in a 33 x 23 cm baking dish.

Crust and bake
- Mix melted butter and breadcrumbs, then sprinkle evenly over the crepes.
- Cover the pan loosely with foil.
- Bake 15–20 minutes until the topping is golden and the filling is hot.

Serve
- Remove from oven, let rest briefly and optionally garnish with chopped parsley.
- Divide into portions and serve immediately.
