- 3 tbspRapeseed oil

- 3 tbspWhite wine vinegar

Preparation
- Peel and boil the potatoes in salted water, let cool and slice thinly.
- Slice or shred the cooked beef thinly.
- Rinse soaked herrings briefly, pat dry and cut into pieces or strips.
- Peel and slice the carrots into thin rounds or sticks.
- Peel, core and thinly slice the tart apples.
- Peel and finely slice the onion.

Dressing and finish
- Mix rapeseed oil, white wine vinegar and sour cream in a bowl. Season with salt and pepper. If too acidic, mellow with 1–2 tbsp cold water or a splash of milk.
- Gently toss potatoes, beef, herring, carrots, apples and onion with the dressing so slices remain intact.
- Taste and let the salad rest chilled for at least 15 minutes before serving.
