Prepare
- Preheat the oven to 165 °C.
- Line a roasting pan with foil and lightly grease or spray with cooking spray.

Make the rub
- Combine black pepper, flour, ground mustard, dried sage and salt in a small bowl.
- Set the dry rub aside.

Rub the roast
- Rub the pork roast all over with the spice mixture so it is evenly coated.
- Set aside briefly (about 5 minutes) so the rub adheres.

Initial roast
- Place the roast in the prepared pan.
- Roast in the preheated oven for 30 minutes to form an initial crust.

Prepare the glaze
- Mix applesauce, cinnamon, honey and nutmeg in a bowl until smooth.

Glaze and finish roasting
- Remove the roast from the oven and brush evenly with the glaze.
- Return to the oven and roast until the internal temperature reaches 74 °C (about 50–60 minutes).
- Remove from the oven and let rest 10–15 minutes before slicing and serving with pan juices.
