  • 1500 gPork roast
  • 240 gApfelmus
  • 0.5 gCinnamon
  • 114 gHoney

    Prepare

    • Preheat the oven to 165 °C.
    • Line a roasting pan with foil and lightly grease or spray with cooking spray.

    Make the rub

    • Combine black pepper, flour, ground mustard, dried sage and salt in a small bowl.
    • Set the dry rub aside.

    Rub the roast

    • Rub the pork roast all over with the spice mixture so it is evenly coated.
    • Set aside briefly (about 5 minutes) so the rub adheres.

    Initial roast

    • Place the roast in the prepared pan.
    • Roast in the preheated oven for 30 minutes to form an initial crust.

    Prepare the glaze

    • Mix applesauce, cinnamon, honey and nutmeg in a bowl until smooth.

    Glaze and finish roasting

    • Remove the roast from the oven and brush evenly with the glaze.
    • Return to the oven and roast until the internal temperature reaches 74 °C (about 50–60 minutes).
    • Remove from the oven and let rest 10–15 minutes before slicing and serving with pan juices.
