Make the sauce
- Melt the butter and put it in a heatproof bowl.
- Stir in the hot sauce, minced garlic and soy sauce. Keep warm.

Season and fry
- Heat oil to 180 °C.
- Toss the wings with seasoned salt and black pepper.
- Fry wings in batches for 11 minutes until golden and crisp.
- Drain on a rack (avoid paper towels to keep them crispy).

- Toss the drained wings with the sauce until evenly coated.
- Serve warm.
