Prepare spice mix
- Thoroughly mix all dry spices in a bowl (paprika, onion salt, chili, black pepper, celery salt, sage, garlic powder, allspice, oregano, basil, marjoram).
- Combine the spice mix with the flour, brown sugar and the added salt.

Breading
- Lightly coat chicken pieces with egg white so the surface is damp.
- Transfer the chicken to the seasoned flour mix and turn several times until the coating adheres well.
- Let the coated pieces rest 5 minutes to allow the crust to set slightly.

Frying
- Preheat fryer or a deep pot to 175 °C (350 °F).
- Fry the chicken in batches so the oil temperature remains steady. Breasts and wings about 12–14 minutes, legs and thighs a few minutes longer.
- Check doneness: internal temperature should reach 74 °C (165 °F).
- Drain on paper towels and serve hot.
