  • 60 gOil
  • 30 gEgg
  • 190 gFlour
  • 12 gSugar
  • 18 gSalt
  • 7 gBell pepper
  • 8 gOnion powder
  • 2 gChili
  • 2 gPepper
  • 1.5 gCelery
  • 0.5 gSage
  • 1.5 gGarlic
  • 1 gAllspice
  • 0.5 gOregano
  • 0.5 gBasil
  • 0.5 gMarjoram

    Prepare spice mix

    • Thoroughly mix all dry spices in a bowl (paprika, onion salt, chili, black pepper, celery salt, sage, garlic powder, allspice, oregano, basil, marjoram).
    • Combine the spice mix with the flour, brown sugar and the added salt.

    Breading

    • Lightly coat chicken pieces with egg white so the surface is damp.
    • Transfer the chicken to the seasoned flour mix and turn several times until the coating adheres well.
    • Let the coated pieces rest 5 minutes to allow the crust to set slightly.

    Frying

    • Preheat fryer or a deep pot to 175 °C (350 °F).
    • Fry the chicken in batches so the oil temperature remains steady. Breasts and wings about 12–14 minutes, legs and thighs a few minutes longer.
    • Check doneness: internal temperature should reach 74 °C (165 °F).
    • Drain on paper towels and serve hot.
