  • 80 mlMilk
  • 60 mlOil
  • 160 mlYogurt
  • 1 pcsEgg
  • 300 gFlour
  • 60 gSugar
  • 18 gPoppy seed
  • 1 tbspLemon zest
  • 0.25 tspLemon extract
  • 2.5 tspBaking powder
  • 0.5 tspBaking soda
  • 0.5 tspSalt
  • 120 gPowdered sugar
  • 2.5 tspLemon juice

Instructions

    Preparation

    • Preheat the oven to 200 °C (400 °F).
    • Grease a 12-cup muffin tin or line with paper cases.

    Sift dry ingredients

    • Sift the flour, sugar, poppy seeds, lemon zest, lemon extract, baking powder and salt into a medium bowl and mix.

    Mix wet ingredients

    • In a separate bowl whisk together the milk, oil, lemon yogurt and egg until combined.

    Combine and bake

    • Fold the dry ingredients into the wet mixture in three additions, taking care not to overmix.
    • Divide batter between the 12 muffin cups.
    • Bake about 16 minutes until golden and a skewer comes out clean. Let rest 10 minutes in the tin, then cool on a rack.

    Glaze and finish

    • Stir powdered sugar with lemon juice until smooth.
    • Drizzle the warm or cooled muffins with the glaze.
