  • 500 gHam
  • 1 gNutmeg
  • 64 gCheese
  • 250 mlMilk
  • 64 gButter
  • 4 pcsEgg
  • 5 gSalt

    Preparation

    • Preheat the oven to 200 °C (top/bottom heat) or 180 °C fan.
    • Bring a large pot of water to a boil and add 5 g salt.

    Cook and cut pasta

    • Cook 250 g macaroni in plenty of salted boiling water until al dente (not mushy), about 7–9 minutes according to package instructions.
    • Drain, let steam off briefly, then cut the macaroni into pieces about 2.5 cm long.

    Layer and season

    • Lightly grease a casserole dish. Layer the cut macaroni with 500 g cooked chopped ham and 64 g grated cheese.
    • Sprinkle about 1 g freshly grated nutmeg between the layers.

    Prepare custard

    • Mix 250 ml milk with 64 g melted butter and 4 well-beaten eggs; season with a little salt.
    • Pour the egg-milk mixture evenly over the layered casserole and press lightly so the liquid soaks between layers.

    Baking

    • Bake in the preheated oven for about 45–60 minutes until the top is golden and set.
    • Let rest 5–10 minutes before serving and cut into portions.
