    Preparation

    • Bring plenty of water to a boil in a large pot and salt it well.
    • Cook the macaroni according to package instructions until al dente.
    • Drain the pasta thoroughly in a colander.
    • Return the hot pasta to the pot, season with salt, pepper and a pinch of nutmeg.
    • Add the grated Gruyère and Parmesan and the butter in small pieces.
    • Stir vigorously until the cheese melts and the pasta is evenly coated and creamy.
    • Serve immediately on warm plates or in a serving bowl.
