  • 250 gNoodle
  • 64 gButter
  • 128 gParmesan
  • 20 gBreadcrumbs
  • 3 gSalt
  • 0.5 gNutmeg

Instructions

    Cook pasta

    • Bring a large pot of water to a boil, season generously with salt (about 10 g per 2 l).
    • Add dry macaroni (250 g) and cook until al dente according to package instructions (approx. 8–10 min).
    • Drain in a colander, rinse briefly with cold water and let drain well.

    Mix and layer

    • Place the drained pasta in a bowl, season with about 3 g salt and freshly grated nutmeg to taste.
    • Stir in pieces of butter (64 g total) and about one third of the grated Parmesan (approx. 40 g).

    Bake

    • Grease a baking dish with a little butter and sprinkle the bottom with breadcrumbs (about 20 g).
    • Transfer the pasta to the dish, top with the remaining Parmesan to form an even cheese crust.
    • Bake in a preheated oven at 180 °C (350 °F) for 15–20 minutes until the top is golden and lightly crisp.
    • Remove from the oven, let rest briefly and serve as a side to roasts, cutlets or fritters.
