Ingredients

  • 10 gOlive oil
  • 75 gOnion
  • 75 gBell pepper
  • 35 gCarrot
  • 400 gChili beans
  • 360 gRice
  • 60 gBarbecue sauce
  • 280 gRoll

Instructions

    Sauté the vegetables

    • Heat olive oil in a pan over medium-high heat.
    • Add onion, green bell pepper and shredded carrot and cook 3–4 minutes until softened.

    Finish the filling

    • Add cooked brown rice, chili beans (undrained) and barbecue sauce to the pan.
    • Stir to combine and cook 10–15 minutes over medium heat, stirring frequently until heated through. Season to taste.

    Serve

    • Spoon the warm bean-and-rice mixture onto hamburger buns and serve immediately.
    • Optional: garnish with chopped parsley, pickles or extra barbecue sauce.
