Prepare buns
- Preheat oven to 93 °C (200 °F) and place a rack to keep the buns warm.
- Whisk the egg, hot sauce and cream in a shallow dish.
- Dip the cut sides of the halved buns into the egg mixture, place on a rack and let sit 10 minutes to absorb the mixture.

Toast buns and keep warm
- Heat a medium nonstick skillet over medium heat and lightly grease with cooking spray.
- Place the buns cut-side down and brown. Transfer to a clean plate and repeat.
- Keep the browned buns warm in the preheated oven.

Form and season patties
- Divide the ground beef into 4 equal portions and form patties.
- Brush both sides with olive oil and season generously with salt and freshly ground black pepper.

Grill or cook patties
- Heat the grill (or skillet) very hot.
- Cook the patties, turning often, until internal temperature reaches 63 °C for medium-rare, 71 °C for medium, 77 °C for well done.
- Remove patties, top each with a slice of cheese and cover with foil. Let rest 3 minutes.

Assemble
- Place each patty on the bottom bun half, cover with top half and serve warm.
