Ingredients

  • 250 gMozzarella
  • 250 gTomato
  • 10 gBasil
  • 45 mlOlive oil
  • 5 gSalt
  • 0.5 gPepper
  • 250 gPasta

Instructions

    Prepare

    • Roughly cut the mozzarella.
    • Half or roughly chop the tomatoes and put them together with the mozzarella in a large salad bowl.

    Season and rest

    • Tear the basil and sprinkle over the mozzarella and tomatoes.
    • Drizzle olive oil, add salt and black pepper and gently mix.
    • Cover the bowl and let rest at room temperature for at least 30 minutes to develop a light dressing.

    Cook pasta

    • Bring a large pot of water to a boil (salt if desired).
    • Cook fresh egg pasta al dente according to package instructions (about 2–4 minutes).
    • Drain pasta, reserving some cooking water.

    Serve

    • Add the hot pasta to the bowl with tomatoes, mozzarella and basil.
    • Toss well, adding a little reserved cooking water if needed so the sauce coats the pasta.
    • Serve immediately.
