Cook and mash potatoes
- Peel (optional) and cut the potatoes into even pieces.
- Bring to a boil in salted water and simmer about 15 minutes until tender.
- Drain and thoroughly mash the potatoes.

Stir in milk and butter
- Warm the milk with half the butter (about 25 g) in a small pan or in the corner of the potato pan until the butter melts. Do not boil.
- Gradually beat the warm milk-butter mixture into the mashed potatoes until creamy.
- Stir in the wholegrain mustard.

Fry spring onions and fold in
- Melt the remaining butter (about 25 g) in a pan over medium heat.
- Gently fry the spring onions (roughly chopped) 1–2 minutes until soft but bright green.
- Fold the fried spring onions into the mash and serve immediately.
