Ingredients

  • 1000 gPotato
  • 200 mlMilk
  • 50 gButter
  • 2 tbspMustard
  • 100 gGreen onion

Instructions

    Cook and mash potatoes

    • Peel (optional) and cut the potatoes into even pieces.
    • Bring to a boil in salted water and simmer about 15 minutes until tender.
    • Drain and thoroughly mash the potatoes.

    Stir in milk and butter

    • Warm the milk with half the butter (about 25 g) in a small pan or in the corner of the potato pan until the butter melts. Do not boil.
    • Gradually beat the warm milk-butter mixture into the mashed potatoes until creamy.
    • Stir in the wholegrain mustard.

    Fry spring onions and fold in

    • Melt the remaining butter (about 25 g) in a pan over medium heat.
    • Gently fry the spring onions (roughly chopped) 1–2 minutes until soft but bright green.
    • Fold the fried spring onions into the mash and serve immediately.
