  • 18 gEgg yolk
  • 24 gWheat flour
  • 5 gSalt
  • 0.5 gNutmeg

    Preparation

    • Melt the butter in a small pan or microwave and let it cool until lukewarm.
    • Whisk the whole egg and the egg yolk in a bowl.

    Mix the dough

    • Slowly stir the lukewarm butter into the whisked eggs.
    • Add nutmeg (or finely chopped parsley) and salt.
    • Gradually stir in the flour until a smooth, slightly thick batter forms. Stir briefly to ensure even distribution.

    Form and cook dumplings

    • Use a teaspoon to form small dumplings and drop them directly into the hot (not vigorously boiling) soup.
    • Let the dumplings simmer in the soup for about 10 minutes until risen and cooked through.
    • Serve with the soup; optionally sprinkle with fresh parsley.
