  • 600 gBeef
  • 150 gPork fat
  • 1 pcsEgg
  • 1 tbspMilk
  • 0.5 gNutmeg
  • 0.25 gCloves
  • 80 gBreadcrumbs
  • 40 gButter
  • 8 gSalt

    Preparation

    • Finely chop the beef and pork fat (or run through a fine grinder).
    • Combine both in a bowl, add 8 g salt and mix well until homogeneous.
    • Shape into 8–12 round, flat patties (about 8 pieces for 4 servings).

    Breading

    • Beat the egg with the milk and season with ground cloves and nutmeg.
    • Dip the meat patties into the egg mixture, then coat both sides with breadcrumbs or crushed rusk, pressing lightly.

    Frying

    • Heat butter (optionally with 1 tsp oil) in a large pan and adjust heat so the butter doesn't burn.
    • Fry the breaded cutlets 2–4 minutes per side over medium-high heat until golden and cooked through.
    • Drain briefly on paper towels and serve immediately.
