- 1 tbspMilk

Preparation
- Finely chop the beef and pork fat (or run through a fine grinder).
- Combine both in a bowl, add 8 g salt and mix well until homogeneous.
- Shape into 8–12 round, flat patties (about 8 pieces for 4 servings).

Breading
- Beat the egg with the milk and season with ground cloves and nutmeg.
- Dip the meat patties into the egg mixture, then coat both sides with breadcrumbs or crushed rusk, pressing lightly.

Frying
- Heat butter (optionally with 1 tsp oil) in a large pan and adjust heat so the butter doesn't burn.
- Fry the breaded cutlets 2–4 minutes per side over medium-high heat until golden and cooked through.
- Drain briefly on paper towels and serve immediately.
