Cook the pasta
- Bring a large pot of water to a boil.
- Add the salt to the boiling water.
- Add the pasta and cook until al dente according to package instructions.

Fry the guanciale
- While the pasta cooks, cut the guanciale into pieces.
- Heat a pan over medium heat and add the guanciale without extra fat.
- Fry the guanciale until most of the fat has rendered and the pieces are crispy (about 6–10 minutes).

Combine and serve
- Drain the cooked pasta, reserving about 2–3 tablespoons of cooking water.
- Add the pasta to the pan with the guanciale and toss for 1–2 minutes so it absorbs the flavor.
- Add grated Pecorino and freshly ground black pepper. Add a little cooking water if needed to create a creamy coating. Toss briefly and serve immediately.
