  • 250 gGuanciale
  • 100 gPecorino
  • 2 gPepper

    Cook the pasta

    • Bring a large pot of water to a boil.
    • Add the salt to the boiling water.
    • Add the pasta and cook until al dente according to package instructions.

    Fry the guanciale

    • While the pasta cooks, cut the guanciale into pieces.
    • Heat a pan over medium heat and add the guanciale without extra fat.
    • Fry the guanciale until most of the fat has rendered and the pieces are crispy (about 6–10 minutes).

    Combine and serve

    • Drain the cooked pasta, reserving about 2–3 tablespoons of cooking water.
    • Add the pasta to the pan with the guanciale and toss for 1–2 minutes so it absorbs the flavor.
    • Add grated Pecorino and freshly ground black pepper. Add a little cooking water if needed to create a creamy coating. Toss briefly and serve immediately.
