  • 1 tspSugar
  • 15 gYeast
  • 225 gWheat flour
  • 9 gSalt
  • 25 mlOlive oil
  • 80 gPassata
  • 70 gMozzarella
  • 5 gOregano
  • 5 gBasil

Instructions

    Preheat oven

    • Preheat the oven to 230 °C (450 °F).

    Activate yeast

    • Put 150 ml lukewarm water into a small bowl.
    • Add 1 tsp sugar and crumble in 15 g fresh yeast.
    • Leave the mixture in a warm place for 10–15 minutes until frothy.

    Mix dough

    • Sift 225 g plain flour and 1½ tsp salt into a large bowl and make a well in the center.
    • Pour in the yeast mixture and 15 ml olive oil.
    • With floured hands, slowly mix until a sticky dough forms.

    Knead dough

    • Dust your work surface generously with flour.
    • Knead the dough for about 10 minutes until smooth and elastic.
    • Place the dough in a lightly oiled non-stick baking tray (round or any shape).

    Top the pizza

    • Spread 80 g passata evenly over the dough, reaching the edges.
    • Distribute 70 g mozzarella evenly on top, season with oregano and a pinch of black pepper, then drizzle with 10 ml olive oil.

    Bake and serve

    • Bake 10–12 minutes until the crust is golden and the cheese has a slight color.
    • Remove from the oven, top with fresh basil leaves and serve immediately.
