Preheat oven
- Preheat the oven to 230 °C (450 °F).

Activate yeast
- Put 150 ml lukewarm water into a small bowl.
- Add 1 tsp sugar and crumble in 15 g fresh yeast.
- Leave the mixture in a warm place for 10–15 minutes until frothy.

Mix dough
- Sift 225 g plain flour and 1½ tsp salt into a large bowl and make a well in the center.
- Pour in the yeast mixture and 15 ml olive oil.
- With floured hands, slowly mix until a sticky dough forms.

Knead dough
- Dust your work surface generously with flour.
- Knead the dough for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled non-stick baking tray (round or any shape).

Top the pizza
- Spread 80 g passata evenly over the dough, reaching the edges.
- Distribute 70 g mozzarella evenly on top, season with oregano and a pinch of black pepper, then drizzle with 10 ml olive oil.

Bake and serve
- Bake 10–12 minutes until the crust is golden and the cheese has a slight color.
- Remove from the oven, top with fresh basil leaves and serve immediately.
