- 2 gLemon zest
- 30 gShallot

Prepare the mixture
- Place the minced pork in a bowl.
- Add salt, freshly grated nutmeg, lemon zest (or finely chopped shallot), the egg, grated white bread and cream.
- Mix well by hand or with a spoon until a homogeneous, moldable mixture forms. If too wet, add more grated bread; if too dry, add a little cream.

Shape and coat
- Shape small sausage-like rolls (about 6–8 cm long).
- Coat the rolls all over in the breadcrumbs (rusk) until lightly covered.

Fry and serve
- Melt butter in a large pan over medium heat.
- Fry the breaded rolls in batches until golden all over (about 6–8 minutes), turning once.
- Drain briefly on kitchen paper and serve warm as a garnish for spinach or braised cabbage. Sprinkle with lemon zest if desired.
