  • 10 gSalt
  • 1 gNutmeg
  • 2 gLemon zest
  • 30 gShallot
  • 1 pcsEgg
  • 80 gBread
  • 30 mlCream
  • 60 gZwieback
  • 30 gButter

Instructions

    Prepare the mixture

    • Place the minced pork in a bowl.
    • Add salt, freshly grated nutmeg, lemon zest (or finely chopped shallot), the egg, grated white bread and cream.
    • Mix well by hand or with a spoon until a homogeneous, moldable mixture forms. If too wet, add more grated bread; if too dry, add a little cream.

    Shape and coat

    • Shape small sausage-like rolls (about 6–8 cm long).
    • Coat the rolls all over in the breadcrumbs (rusk) until lightly covered.

    Fry and serve

    • Melt butter in a large pan over medium heat.
    • Fry the breaded rolls in batches until golden all over (about 6–8 minutes), turning once.
    • Drain briefly on kitchen paper and serve warm as a garnish for spinach or braised cabbage. Sprinkle with lemon zest if desired.
