Ingredients

  • 800 gPotato
  • 450 gOnion
  • 30 mlOlive oil
  • 100 mlChicken broth
  • 200 gCream
  • 50 gParmesan
  • 600 gChicken breast
  • 48 gBacon
  • 150 gPea
  • 100 gSpinach

    Prepare

    • Peel and thinly slice potatoes (800 g).
    • Peel and slice 3 onions. Prepare 4 chicken breasts and 4 bacon slices.
    • Preheat oven to 220 °C (grill) or 200 °C fan.

    Cook onions

    • Heat 2 tbsp olive oil and sweat the onions until soft.
    • Deglaze with 100 ml chicken stock and reduce slightly.

    Assemble and bake gratin

    • Parboil potato slices 5–8 minutes until just tender; drain.
    • Place onions in a baking dish, layer potatoes on top, spoon over crème fraîche (about 200 g) to cover but not submerge.
    • Grate about 50 g Parmesan on top and grill until golden (8–12 minutes).

    Cook chicken, bacon and greens

    • Pan-fry chicken breasts 6–8 minutes per side until cooked.
    • Fry bacon until crisp.
    • Warm peas (150 g) and spinach (100 g) briefly and season.
    • Serve gratin with chicken, bacon, peas and spinach.
