Preparation and layering
- Peel and slice the potatoes very thinly (use a mandoline if available).
- Chop the onion finely.
- Lightly grease a pie or baking dish. Layer the potatoes in an overlapping pattern, sprinkling some onion, salt and pepper between layers.
- Drizzle 1 tbsp (15 ml) water over the layered potatoes and scatter the chopped butter evenly on top.
- Cover the filling with the rolled-out puff pastry, tuck or press the edges. Prick the pastry a few times with a fork to allow steam to escape.

Baking
- Preheat the oven to 190 °C (375 °F).
- Bake the pie for about 1½ hours until the pastry is golden and the potatoes are cooked through.
- Remove from the oven, let rest 5–10 minutes, then cut into portions and serve.
