  • 500 gPotato
  • 21 gOnion
  • 6 gSalt
  • 1 gPepper
  • 57 gButter
  • 250 gPuff pastry
  • 15 mlWater

    Preparation and layering

    • Peel and slice the potatoes very thinly (use a mandoline if available).
    • Chop the onion finely.
    • Lightly grease a pie or baking dish. Layer the potatoes in an overlapping pattern, sprinkling some onion, salt and pepper between layers.
    • Drizzle 1 tbsp (15 ml) water over the layered potatoes and scatter the chopped butter evenly on top.
    • Cover the filling with the rolled-out puff pastry, tuck or press the edges. Prick the pastry a few times with a fork to allow steam to escape.

    Baking

    • Preheat the oven to 190 °C (375 °F).
    • Bake the pie for about 1½ hours until the pastry is golden and the potatoes are cooked through.
    • Remove from the oven, let rest 5–10 minutes, then cut into portions and serve.
