Ingredients

  • 800 gPotato
  • 50 gFlour
  • 2 pcsEgg
  • 100 gBreadcrumbs
  • 50 gBeef tallow

    Prepare

    • Peel the potatoes (optional) and boil them until almost done (about 12–15 minutes, depending on size).
    • Drain the potatoes and let them steam-dry briefly so the surface becomes slightly dry.

    Coat (optional) and Fry

    • If desired, coat the potatoes in flour and shake off excess.
    • Dip in beaten egg yolks and then in fine breadcrumbs.
    • Heat the beef drippings in a large pan (not too hot to avoid burning the coating).
    • Add the potatoes and fry over medium heat, shaking or turning regularly, until golden-brown and crisp all over (about 8–12 minutes).
    • Remove from the pan, drain briefly on paper towels and serve hot.
