- 800 gPotato
- 360 gApple
- 500 mlWater

Prepare and brown the ribs
- Rinse the pork ribs, pat dry and season lightly with salt.
- Heat 1 tbsp vegetable oil in a shallow lidded frying pan over medium heat and place the ribs in the pan.
- Half-cover the ribs with water (about 250 ml), cover the pan tightly and simmer gently for about 60 minutes until tender and lightly browned.
- Remove the ribs and set aside, leaving the pan juices in the pan.

Cook potatoes and apples together
- Peel (or halve) the small potatoes, wash and pat dry.
- Peel, core and quarter the apples.
- Add the potatoes to the pan with the fond, sprinkle with salt and fry over medium heat. Add 1 tbsp oil if there isn't enough fat.
- Place the rib on the potatoes with the rounded side down and fill the rib cavity with the apple quarters.
- Pour in about 250 ml (1 cup) water, cover tightly and simmer gently until the potatoes are tender and golden (about 25–35 minutes), turning the potatoes once.
- Remove the rib with the apples and place in a deep serving bowl; arrange the potatoes around it and drizzle with pan juices to serve.

- Slice the rib if desired and place in a bowl with the filled apple quarters in the center.
- Arrange the potatoes around and serve immediately with pan juices.
