  • 40 gButter
  • 4 gSalt

    Preparation

    • Scrub medium potatoes thoroughly under running water; do not peel.
    • Cut the butter into pieces and keep cold.

    Cooking

    • Place a heavy (ideally cast-iron) pot on medium–high heat without adding water.
    • Put the washed potatoes into the dry pot, sprinkle a little salt over them and close the lid tightly.
    • Cook for about 25–35 minutes. After 20–30 minutes check: when the edges become tender, quickly turn the potatoes and cover again.
    • Continue cooking until potatoes are completely soft inside (test with a skewer).
    • Serve hot with a piece of cold butter on each portion so it melts on the potato; add extra salt to taste.
