Ingredients

  • 800 gCabbage
  • 20 gGoose fat
  • 20 gButter
  • 150 gOnion
  • 600 mlBroth
  • 50 gOatmeal
  • 8 gSalt
  • 200 gBratwurst
  • 100 gPork belly

    Preparation

    • Use all leaves that are not too tough and the soft stems. Cut the cabbage into pieces and chop finely.
    • Peel and finely dice the onion. Weigh the oat groats. Prepare the broth.

    Sauté and Cook

    • Heat goose fat and butter in a large pot over medium heat and sauté the diced onion until translucent.
    • Add the chopped cabbage and briefly sauté until it wilts.
    • Sprinkle the oat groats over the cabbage and briefly toast them.
    • Pour in the broth so the cabbage is covered, add salt and bring to a boil.
    • Cover and simmer over medium-low heat for 20–30 minutes until the cabbage is tender. Stir occasionally and add more broth/water if needed.
    • Season with salt to taste and serve hot.

    Optional: With Sausage or Bacon

    • For a heartier version, slice smoked sausage or dice pork belly.
    • Fry the sausage slices or bacon cubes briefly in a pan, then add to the cabbage pot to cook along or serve on the side.
