Preparation
- Finely chop leftover roast beef (or ham/smoked meat).
- Crack the eggs into a bowl, add milk, a pinch of salt and freshly ground pepper, and whisk well.
- Stir the chopped meat and chopped parsley into the egg mixture.

Cooking (Omelette method)
- Heat a large frying pan over medium heat and melt the butter.
- Pour in the egg-meat mixture and let it set without stirring. The underside should turn golden brown while the top remains slightly moist.
- Fold the omelette in half or once and briefly cook until just done but still juicy.
- Plate, sprinkle with chopped parsley and serve immediately.
