  • 454 gMushroom
  • 255 gSpinach
  • 794 gTomato
  • 1893 mlChicken broth
  • 794 gTortellini
  • 30 gParmesan

    Preparation

    • Lightly coat a large stockpot with a little olive oil (or vegetable spray) and heat over medium.
    • Remove sausage from casings and brown in the pot, breaking it into crumbles until no pink remains.
    • Add sliced mushrooms and sauté, stirring occasionally, until lightly browned.
    • Add the bag of baby spinach and stir until wilted and lightly sautéed.
    • Stir in the diced tomatoes.
    • Pour in the chicken broth, bring to a boil, then reduce heat.
    • Add the tortellini and simmer 10–15 minutes on low‑medium until the pasta is tender.
    • Taste and adjust seasoning if needed. Ladle into bowls and sprinkle generously with grated Parmesan.
