- Lightly coat a large stockpot with a little olive oil (or vegetable spray) and heat over medium.
- Remove sausage from casings and brown in the pot, breaking it into crumbles until no pink remains.
- Add sliced mushrooms and sauté, stirring occasionally, until lightly browned.
- Add the bag of baby spinach and stir until wilted and lightly sautéed.
- Stir in the diced tomatoes.
- Pour in the chicken broth, bring to a boil, then reduce heat.
- Add the tortellini and simmer 10–15 minutes on low‑medium until the pasta is tender.
- Taste and adjust seasoning if needed. Ladle into bowls and sprinkle generously with grated Parmesan.
