- 70 gOnion
- 225 gSausage
- 120 mlWine
- 1588 gTomato
- 170 gTomato paste
- 5 gGarlic
- 5 gSugar
- 1 gSpice mix
- 25 gParmesan
Instructions
- 1
Cook the pasta
- Bring a large pot of water to a boil (salt if desired).
- Cook the whole-grain spaghetti according to package directions until al dente.
- Drain, reserving about 60 ml (1/4 cup) of pasta water.
- 2
Brown the sausage
- While the pasta cooks, heat 1 tsp (5 ml) olive oil in a large saucepan or Dutch oven over medium-high heat.
- Peel and finely chop the onion and add to the hot oil.
- Remove casings from the sausage if needed, crumble into the pan and cook, breaking up the meat, until cooked through and onion is tender (about 4–6 minutes).
- 3
Finish the sauce
- Add wine (120 ml) to deglaze the pan, scraping up browned bits.
- Add canned diced tomatoes (with juice), tomato paste, minced garlic, sugar and dried Italian seasoning. Stir and reduce heat to medium-low.
- Simmer gently until the pasta is ready (5–10 minutes). If sauce is too thick, stir in reserved pasta water.
- Stir in grated Parmesan before serving.
- 4
Serve
- Serve the sauce over the cooked pasta or toss the pasta directly in the sauce.
- Top with extra Parmesan if desired.
