  • 320 mlCream
  • 1 tspTarragon
  • 0.3 gNutmeg
  • 1.5 gSalt
  • 0.3 gPepper
  • 230 gTart base
  • 84 gEmmental cheese

Instructions

    Prepare

    • Preheat oven to 190 °C (375 °F).
    • Place the prepared frozen pie crust on a baking sheet (if frozen, let it thaw slightly as package directs).

    Make the custard

    • Put eggs, cream, chopped fresh tarragon, nutmeg, salt and pepper in a blender or a tall jug.
    • Blend briefly (or whisk) until homogeneous, taking care not to incorporate too much air.

    Assemble the quiche

    • Place half of the grated cheese in the pie crust.
    • Pour the egg-cream mixture over the cheese, then top with the remaining cheese until the crust is full.

    Bake

    • Bake 35–40 minutes until set and lightly golden.
    • A toothpick or fork inserted into the center should come out clean.
  5. 5

    Cool and serve

    • Remove from oven and cool at least 20 minutes to let the filling set.
    • Slice and serve warm or at room temperature.
