Prepare
- Preheat oven to 190 °C (375 °F).
- Place the prepared frozen pie crust on a baking sheet (if frozen, let it thaw slightly as package directs).

Make the custard
- Put eggs, cream, chopped fresh tarragon, nutmeg, salt and pepper in a blender or a tall jug.
- Blend briefly (or whisk) until homogeneous, taking care not to incorporate too much air.

Assemble the quiche
- Place half of the grated cheese in the pie crust.
- Pour the egg-cream mixture over the cheese, then top with the remaining cheese until the crust is full.

Bake
- Bake 35–40 minutes until set and lightly golden.
- A toothpick or fork inserted into the center should come out clean.

Cool and serve
- Remove from oven and cool at least 20 minutes to let the filling set.
- Slice and serve warm or at room temperature.
