- 200 gFlour
- 120 mlLemon juice
- 120 gOil
- 45 gSalt
- 22.5 gPepper
- 15 gCayenne pepper

Prepare
- Rinse shrimp if needed and pat dry.
- Put flour in a shallow dish and lemon juice in a second dish.
- Coat shrimp in flour, dip briefly in lemon juice, then coat in flour again. Set aside.

Fry
- Heat enough neutral oil (e.g. sunflower or canola) to about 190 °C in a large pot or fryer. (Use about 3 L for frying; roughly 120 g will be absorbed by the shrimp.)
- Fry shrimp in batches (about 6 at a time) for 2 minutes or until deep golden and cooked through.
- Drain on a rack and repeat with remaining shrimp.

Season and serve
- Arrange all fried shrimp on a platter.
- Sprinkle evenly with salt, freshly ground black pepper and cayenne pepper.
- Serve immediately with lemon wedges and a green salad.
