Ingredients

  • 1500 gShrimp
  • 200 gFlour
  • 120 mlLemon juice
  • 120 gOil
  • 45 gSalt
  • 22.5 gPepper
  • 15 gCayenne pepper

    Prepare

    • Rinse shrimp if needed and pat dry.
    • Put flour in a shallow dish and lemon juice in a second dish.
    • Coat shrimp in flour, dip briefly in lemon juice, then coat in flour again. Set aside.

    Fry

    • Heat enough neutral oil (e.g. sunflower or canola) to about 190 °C in a large pot or fryer. (Use about 3 L for frying; roughly 120 g will be absorbed by the shrimp.)
    • Fry shrimp in batches (about 6 at a time) for 2 minutes or until deep golden and cooked through.
    • Drain on a rack and repeat with remaining shrimp.

    Season and serve

    • Arrange all fried shrimp on a platter.
    • Sprinkle evenly with salt, freshly ground black pepper and cayenne pepper.
    • Serve immediately with lemon wedges and a green salad.
