- 16 gCurry powder
- 0.3 gChili flakes
- 45 mlOlive oil

Prepare the marinade
- Crush the garlic (with a little salt if desired) and mix with lemon zest and juice, curry powder, chilli flakes, olive oil and freshly ground black pepper into a paste. Use a mortar or a mini processor.
- Toss the chicken thighs in the marinade, place in a bowl or bag and let sit for at least 20–30 minutes (or up to 2 hours in the fridge for stronger flavour).

Grill
- Light the barbecue until hot.
- Place the herb bunches (rosemary, thyme) directly on the grill and lay the marinated chicken thighs, skin side up, on top.
- Close the lid (if you have one) and cook for about 10 minutes until the meat begins to colour.
- Turn the chicken and continue to cook for another 20–30 minutes, turning as needed, until slightly charred from the herbs and cooked through to the bone.
- Let rest briefly before serving. Serve with lemon wedges.
