- 450 gPenne
- 60 mlOlive oil
- 3 pcsGarlic clove
- 400 gTomato
- 0.5 tspChili flakes
- 0.5 tspHerb mix
- 6 leafBasil
- 40 gParmesan

Cook the pasta
- Bring a large pot of water to a boil.
- Add about 10 g salt to the boiling water.
- Add the penne and cook according to package instructions until al dente (about 9 minutes).

Make the arrabbiata sauce
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the garlic and sauté, stirring, for 1–2 minutes until fragrant (do not burn).
- Add the chopped tomatoes, chili flakes, Italian seasoning and salt and pepper to taste.
- Bring to a boil and simmer for about 5 minutes so the sauce thickens slightly.
- Remove from heat and stir in the chopped basil.

Combine and serve
- Drain the pasta and reserve some cooking water if needed.
- Add the pasta to the sauce and toss to combine, adding a splash of reserved water if the sauce is too thick.
- Garnish with Parmigiano-Reggiano and extra basil, then serve warm.
