  • 450 gPenne
  • 60 mlOlive oil
  • 3 pcsGarlic clove
  • 400 gTomato
  • 0.5 tspChili flakes
  • 0.5 tspHerb mix
  • 6 leafBasil
  • 40 gParmesan
  • 10 gSalt

    Cook the pasta

    • Bring a large pot of water to a boil.
    • Add about 10 g salt to the boiling water.
    • Add the penne and cook according to package instructions until al dente (about 9 minutes).

    Make the arrabbiata sauce

    • Heat the olive oil in a large skillet over medium-high heat until shimmering.
    • Add the garlic and sauté, stirring, for 1–2 minutes until fragrant (do not burn).
    • Add the chopped tomatoes, chili flakes, Italian seasoning and salt and pepper to taste.
    • Bring to a boil and simmer for about 5 minutes so the sauce thickens slightly.
    • Remove from heat and stir in the chopped basil.

    Combine and serve

    • Drain the pasta and reserve some cooking water if needed.
    • Add the pasta to the sauce and toss to combine, adding a splash of reserved water if the sauce is too thick.
    • Garnish with Parmigiano-Reggiano and extra basil, then serve warm.
