- 2 pcsBay leaf

- 750 gKale
- 300 gSausage
- 500 mlMilk
- 0.3 gNutmeg
- 0.3 gSalt

Preparation
- Wash, peel and cut the potatoes into evenly sized pieces.
- Prepare bay leaves. Peel and roughly chop the shallots.
- If needed, wash the kale, remove coarse stems and slice finely.
- Warm the milk gently (stovetop or microwave).

Cook potatoes
- Place potatoes and bay leaves in a large pot, cover with water and lightly salt.
- Bring to a boil and simmer about 20 minutes until tender.
- Remove bay leaves, drain potatoes and let them steam dry briefly.

Cook kale and shallots
- Melt 1 tbsp (approx. 14 g) butter in a large skillet over medium heat.
- Sauté shallots 2–3 minutes until translucent.
- Add kale, 2 tbsp water, season with salt and pepper, cover and cook 8–10 minutes until tender.
- Stir occasionally.

Mash and combine
- Mash potatoes with a masher or ricer.
- Quickly add warm milk and the remaining butter (approx. 28 g) and mix until creamy.
- Season with grated nutmeg, salt and pepper and fold in the cooked kale.

Prepare sausage and serve
- Slice and heat the smoked sausage briefly in a pan (or follow package instructions).
- Top the stamppot with sausage slices and serve with mustard or gravy if desired.
