- 120 gFlour
- 160 gCornmeal
- 15 mlLemon juice
- 120 gOrange concentrate
- 60 gHoisin sauce
- 14 gHoney
- 30 mlSoy sauce
- 5 mlSriracha
- 3 gGarlic
- 6 gGinger
- 100 mlPeanut oil

Prepare breading & shrimp
- If needed, thaw shrimp and pat dry.
- Place flour in a shallow dish and cornmeal in another shallow dish.
- Dredge shrimp in flour, then dip into cornmeal so they are fully coated. Let sit 2–3 minutes to set.

Fry shrimp
- Heat oil in a pot or deep fryer to about 190 °C (375 °F).
- Fry shrimp in batches until golden brown (1–3 minutes depending on size).
- Drain shrimp on a rack or paper towels.

Make sauce & toss
- While shrimp fry: combine lemon juice, orange concentrate, hoisin, honey, soy sauce, sriracha, garlic and ginger in a saucepan.
- Heat over medium-high until it comes to a boil and the sauce comes together (1–2 minutes).
- Add shrimp and toss to coat, then serve immediately (garnish with lime/lemon wedges, spring onions or sesame).
