Ingredients

  • 454 gShrimp
  • 120 gFlour
  • 160 gCornmeal
  • 15 mlLemon juice
  • 120 gOrange concentrate
  • 60 gHoisin sauce
  • 14 gHoney
  • 30 mlSoy sauce
  • 5 mlSriracha
  • 3 gGarlic
  • 6 gGinger
  • 100 mlPeanut oil

    Prepare breading & shrimp

    • If needed, thaw shrimp and pat dry.
    • Place flour in a shallow dish and cornmeal in another shallow dish.
    • Dredge shrimp in flour, then dip into cornmeal so they are fully coated. Let sit 2–3 minutes to set.

    Fry shrimp

    • Heat oil in a pot or deep fryer to about 190 °C (375 °F).
    • Fry shrimp in batches until golden brown (1–3 minutes depending on size).
    • Drain shrimp on a rack or paper towels.

    Make sauce & toss

    • While shrimp fry: combine lemon juice, orange concentrate, hoisin, honey, soy sauce, sriracha, garlic and ginger in a saucepan.
    • Heat over medium-high until it comes to a boil and the sauce comes together (1–2 minutes).
    • Add shrimp and toss to coat, then serve immediately (garnish with lime/lemon wedges, spring onions or sesame).
