Preparation
- Peel the sweet potatoes and cut into 2–3 cm cubes.
- Peel and finely grate the ginger.
- Juice the lime.

Cooking
- Put the sweet potatoes, grated ginger, stock and water into a large saucepan.
- Bring to a boil, then reduce heat and simmer about 30 minutes until the sweet potatoes are tender.

Blend and Finish
- Blend the soup in batches in a blender or use an immersion blender until smooth.
- Stir in lime juice.
- Return the soup to the pot, stir in the milk and heat through for a few minutes (do not boil). Season to taste and serve.
