  • 1080 gSweet potato
  • 15 gGinger
  • 480 mlBroth
  • 240 mlWater
  • 240 mlMilk
  • 30 mlLime

    Preparation

    • Peel the sweet potatoes and cut into 2–3 cm cubes.
    • Peel and finely grate the ginger.
    • Juice the lime.

    Cooking

    • Put the sweet potatoes, grated ginger, stock and water into a large saucepan.
    • Bring to a boil, then reduce heat and simmer about 30 minutes until the sweet potatoes are tender.

    Blend and Finish

    • Blend the soup in batches in a blender or use an immersion blender until smooth.
    • Stir in lime juice.
    • Return the soup to the pot, stir in the milk and heat through for a few minutes (do not boil). Season to taste and serve.
