  • 250 gFlour
  • 125 mlWater
  • 30 mlOil
  • 200 gCream
  • 1 pcsOnion
  • 150 gBacon
  • 5 gSalt
  • 1 gPepper
  • 10 gHerbs

Instructions

    Make the dough

    • Combine flour, water, oil and 1 tsp salt in a bowl.
    • Knead into a smooth dough (about 3–5 minutes).
    • Form into a ball, cover and let rest at room temperature for 30 minutes.

    Prepare toppings

    • Peel and slice the onion into thin rings.
    • Cut bacon cubes into smaller pieces if needed.

    Assemble and bake

    • Roll the rested dough thinly to the size of your baking tray and place on a baking sheet lined with parchment paper.
    • Spread crème fraîche evenly over the dough.
    • Top with onion rings and bacon, season with pepper if desired.
    • Bake in a preheated oven at 220 °C (200 °C fan) for 15–20 minutes until edges are golden and crisp.

    • Let the flammkuchen rest briefly, sprinkle with chopped fresh herbs.
    • Cut into pieces and serve immediately.
