Cook potatoes & make mash
- Preheat the oven to 200 °C (180 °C fan).
- Put the potatoes into a pan of cold salted water, bring to the boil and simmer until tender (about 15–20 min).
- Drain, let steam off briefly and mash with 25 g butter and about 50 ml milk. Season with salt and pepper and set aside.

Make white sauce with leeks
- Melt 75 g butter in a wide pan, add sliced leeks and gently cook with a lid for about 10 minutes until soft.
- Whisk 75 g flour with 150 ml white wine until smooth.
- Add 568 ml milk to the leeks, bring to the boil, then add the wine-flour mix while stirring until the sauce thickens.
- Season with salt, pepper and add chopped parsley.

Add fish & assemble
- Season the sauce, add the fish pieces (salmon, haddock and smoked haddock) and stir over the heat for 2 minutes.
- Spoon the fish filling into an ovenproof dish and scatter the halved hard-boiled eggs over it. Let cool slightly until firmer.

Top with mash & bake
- Spread the mashed potatoes over the fish filling, roughen the surface with a fork and sprinkle with grated Gruyère.
- Bake for 30–40 minutes until lightly golden and bubbling at the edges. Rest 5 minutes before serving.
